Our recipe combines our flavourful Sirloin mince, tangy tomato sauce, velvety cheese, and layers of tender lasagna sheets for a mouthwatering experience that is sure to satisfy even the pickiest eaters.
Ingredients
- 400g of Cribbin's sirloin beef mince
- 8 lasagne sheets
- 1 carrot
- 1 onion
- 2 cloves of fresh garlic
- 2 tbsp of tomato paste
- 600g of tomato passata
- 200g of cherry tomatoes
- 200ml of beef stock
- 60ml of red wine
- 100g of mascarpone cheese
- 50g of Parmasan cheese
- 1/2 tsp of dried oregano
- 1/2 tsp of dried rosemary
- Olive oil
- Basil for garnishing
- Salt and pepper
Steps
- Peel and dice the carrot, onion and garlic into very small cubes. Cut the cherry tomatoes in half and begin to heat some olive oil in an oven-proof pan or pot. Add in the vegetables and cook until soft. Add and fry the beef until it is brown and crumbly. Season the meat well with salt and pepper. Add the tomato paste into the pot.
- Deglaze the pot with the red wine and the beef stock. Add the passata and herbs to taste, season well and stir, bringing to a simmer. Top the pan with the lasagne sheets, breaking into smaller pieces if required and enough to cover it. Press them down firmly into the sauce. Add the lid to the pot and allow it to simmer for another 15-20 mins. Preheat the oven to 200 °C.
- Stir in the mascarpone cheese and tear the mozzarella on top and grate over the parmesan. Bake the lasagne in the oven for an additional 10 mins in the oven. Garnish with fresh basil.
