This quick and easy Thai Red Sirloin Beef Curry recipe features tender Irish sirloin, vibrant vegetables, and rich coconut milk infused with Thai red curry paste. Flavored with kaffir lime leaves, fish sauce, and fresh basil, it’s a perfect balance of spicy, savory, and sweet. Ready in under 30 minutes, serve with jasmine rice for a delicious, satisfying meal.
Ingredients
- 200g Irish sirloin steak, sliced into thin strips
- 60g of Thai red curry paste
- 1 can of coconut milk
- 1 tablespoon of white sugar
- 2 teaspoons of fish sauce
- 2 Kaffir lime leaves
- 2 medium peppers, cut into thin strips
- 1 medium aubergine, cut into thin strips
- 50g of green beans
- 1 red chilli, sliced
- Small handful of fresh basil
Steps
- Heat the wok or pan under a medium heat.
- Add a small amount of neutral oil and fry off the curry paste. Stir until aroma is released.
- Pour in the coconut milk and bring to a boil. Add in the kaffir lime leaves and allow to simmer for 2 minutes. Add in the sugar until dissolved.
- Add the fish sauce and sirloin beef, then the remaining vegetables.
- Cook for a further 5-8 minutes or until the beef is fully cooked.
- Add the basil last just before serving. Serve with jasmine rice.
